Since 2012 we have been working on a very special side project, our Barrel Aged Malt Vinegar. Each batch is hand crafted through a slow process of fermentation, Solera-style barrel aging, and it is made from our beer which has local ingredients including farm-roasted specialty malts creating a complex and unique malt vinegar with a distinct Humboldt terroir. Not only is it delicious but it is also another milestone in our efforts to help diversify our local food economy. SOLERA EST. 2012 Solera blending is a special process of long barrel-aging and blending of multiple vintages over time producing a very complex and unique product.
