Since 2012 we have been working on a very special side project - Barrel Aged Craft Malt Vinegar.
Each batch is hand crafted through a slow process of secondary fermentation using a blend of craft beer from our nano-brewery, followed by Solera-style barrel aging, so each bottle contains over 10 year old vinegar blended with each following vintage till about one year old. This long process combined with local ingredients including our farm-roasted specialty malts create a complex and unique craft malt vinegar with a distinct Humboldt terroir.

BOURBON-BARREL AGEDThis limited release was made in collaboration with our friends at Alchemy Distillery. A heavier proportion of young vinegar aged in a fresh whiskey barrel yields a bold, flavorful, and very barrel-forward craft malt vinegar. This blend is ideal as a mixer for craft shrub cocktails and mocktails!
