Since 2012 we have been working on a very special side project - our Barrel Aged Malt Vinegar.
Each batch is hand crafted through a slow process of fermentation and Solera-style barrel aging, in Napa Chardonnay barrels, so each bottle contains over 10 year old vinegar blended with each following vintage till about one year old… and it’s made from our beer! This long process combined with local ingredients including our farm-roasted specialty malts create a complex and unique malt vinegar with a distinct Humboldt terroir.
